Sweet + Sour Candied Salmon Salad


Sometimes things are meant to be together, like peanut butter and jelly. And sometimes not. And sometimes you come across a combination of unexpected flavours by surprise. The latter was the case recently when I made this quick little lunch for myself recently. And now it' on repeat in a big way, so I thought I'd share. 

For a fast  lunch the other day I had a craving for some candied salmon I had just bought on sale, and with the need for a fast veg and salad as well, I added in a little leftover vinaigrette from the night befor's dinner. The result was a combination of a sweet and sour, smokey salad that made me buy even more salmon this week!  Check out the recipe below.

Sweet + Sour Candied Salmon Salad
A nice lunch salad for one.

Salad Ingredients
1 - 3" x 1" piece of candied salmon cut into cubes. 
1/2 cup favourite green lettuce
1/2 cup spinach
1/2 cup frozen peas (just cooked) serve warm on the salad
1 Tbsp chopped cilantro
1/2 green onion
1 tsp pumpkin seeds

Vinaigrette Ingredients
1/3 white wine vinegar
2/3 avocado oil 
1 clove finely chopped garlic
1 tsp dijon mustard
salt and pepper to taste

Cook the peas and keep warm. Prepare the vinaigrette by combining all the ingredients and wisk until combined. Combine all the salad ingredients together except the pumpkin seeds. Drizzle the vinaigrette over the salad and toss. Sprinkle with pumpkin seeds. Enjoy!
